Easter Biscuits
These biscuits are traditonally made at Easter and have been on the tea table in our house since I was a little girl. This is my mother's recipe which probably came from one of those 1950's Good Housekeeping recipe books. A buttery shortbread style biscuit with spice and currants. Easter is not the same without them. Makes about 24 biscuits.
- Time: 15 minutes to prepare and 15 minutes to bake

Hot Cross Buns
12 hot cross buns for Easter. The dough can be made the night before and the first rise allowed to take place in the fridge, but check that it has doubled in size before knocking back and kneading. Serve warm from the oven with butter.
A note about yeast - Active dried yeast and fresh yeast both need to be dissolved in liquid and activated with a little sugar before using. Quick action or instant yeast can be added directly to the dry ingredients without dissolving. Quantity wise using fresh yeast means doubling the quantity of active dried yeast. For quick action/instant yeast follow the manufacturers directions although as a guide half the amount of active dried yeast will be required.

Indian Spiced Chicken Kebabs
Succulent chicken breast pieces marinated in Indian spices and yoghurt making, a very quick and delicious summer meal. Chicken thigh meat is great to use too, and possibly more tasty and succulent than breast meat. Use less chilli powder or cayenne pepper if you prefer less kick, although the amount in this recipe won't have you gasping for water! If you do not have all the spices in your store cupboard, don't worry, just substitute all of the spices with curry powder.
- Time: 20 minutes plus cooking time of 10 to 15 minutes
